Mr. Healey is a character that appears in Diary of a Wimpy Kid: Old School. He goes on the field trip with Greg to Hardscrabble Farms and fills him in on information about the place, as Mr. Healey went himself. According to him, the food is never thrown out, so the stew that is served might have food from 30 years ago.
